1. Soak the fish maw with water inrefrigerator for 2 days to improve texture.
2. Rinse the fish maw and boilingfor 15 minutes. Then cover the pot with lid and soak for 3-4 hours until thewater become warm.
3. Repeat the boiling and soakingprocedure until it become soft. During this period, it is necessary to rinsethe fish maw and change the water every time before boiling.
4. Add ginger, green onions in thewok and preheat the wok. Add Shaoxing wine and the fish maw into water, thensimmer with low heat for 5 minutes, take out and ready to cook.
